Pork Loin "Medallions"

My husband loves when I cook him pork loin...so when I decided to cook my Kroger pork loin for our Easter dinner, he asked me to cook it his favorite way -- which he calls "Pork Medallions."

He has me slice them into about 1/4 to 1/2 slices and them sprinkle them with steak seasoning and let refrigerate overnight. Then, just cook them in a skillet or on a George Foreman Grill (flipping several times) until cooked through but still juicy.

It's too easy but he just loves it!

Product Review: Green Giant Veggie Snack Chips

Ok, so I just received my samples in the mail earlier this week and my entire family has tried them and fallen in love with these snacks! My husband, my mom (visiting from out of state) and my 15-month-old son are all in agreement: they are delicious. We will definitely be buying these again.
Here's what we love about them...
-They aren't oily like most chips
-They are crunchy
-You can taste the faint vegie flavor so it feels like a healthy snack
-The sea salt/cheddar flavoring is delicious so you still feel like you're indulging while snacking.
Yummmmmmmmmmmm!

Our only complaint is that we wish they were a bit lower in fat...but I guess you can't have it all :P

Easter Cupcakes: Kroger-brand

For Easter this year I made frosted cupcakes for our friends and here's how they turned out...

It's pretty common knowledge that I'm super frugal; making these treats was no exception. I bought the Kroger-brand yellow cake mix and chocolate frosting. Then I added some fun Easter sprinkles and decorations...and they were DELICIOUS! I don't think I'll switch back to the more expensive, name-brands anytime soon! Yummmmmmm!
